
If you’re after a simple alternative to a Christmas cake, or you just want some yummy festive cakes around the house at this time of year, then this sticky toffee Christmas cake will fit the bill. Our café chef Laurence has shared this recipe with you to try at home – or you will find it in the café around the festive period!
Ingredients
75g soft butter
175g dark brown sugar
200g self-raising flour
1 tbsp golden syrup
2 tbsp black treacle
2 eggs
1 tsp vanilla extract
200g pitted dried dates
1 tbsp bicarbonate of soda
1 shop bought christmas pudding broken into small pieces
1 roll of shop bought royal icing
Method
Pre-heat the oven to 180’C
In a food processor combine the butter, sugar, eggs, treacle, golden syrup and vanilla extract on a slow speed. Once everything is thoroughly mixed add the flour and mix well.
In a pan, mix the date with 300g water and bring to the boil, then add the bicarbonate of soda and puree the mixture with a hand blender.
Mix the pureed dates with the Christmas pudding and then the cake mixture.
Pour everything into a square cake tray and bake for about 30 minutes.
Remove from the oven and allow to cool. Use the royal icing to decorate and then serve as a quick and easy alternative to Christmas cake!
